The Layout options are found in the Main Menu under Layout.
To see the options associated with Layout, click on the word Layout in the Main Menu with the left-most mouse button.
The canvas is laid out in a layer-format. It is best to think of it as objects stacked in a pile. If you want to see the object that is at the bottom of the pile, you have to move it to the top of the pile (or to the front). If an object is covering up another one that is stacked underneath it then you have to move that object down a layer (or lower).
